Every year, Keystone Resort’s Signature Restaurants showcase a rotating selection of food, wine, beer and spirits for you and your loved ones to enjoy at one tasty price. Each tasting event is $25 per person and begins at 4 p.m.
This past week, I had the pleasure of attending the Farm to Table Presentation & Tasting with Chef Vlass at the Keystone Ranch. The tasting began with a friendly yet sophisticated antipasto spread, wine pairings and introduction to the Farm to Table philosophy. Farm to Table (FTT) is the process in which food is harvested, packaged, sold and consumed with a consciousness toward producing locally.
According to Chef Vlass, one of the benefits of FTT is “knowing the story behind the food”. When you take the time to consider where your food is coming from you discover what additives or lack thereof are used to produce and the timing of harvest in correlation to packaging and sales. Furthermore, you see the direct benefit of supporting small, local, authentic businesses in the relationships fostered. Imagine opening your FTT package of veggies, not only being assured with the quality but in the simple things such as a hand written thank you note for continuous business. Quality over quantity is apparent in all facets of the FTT process.
